This cream cheese recipe only has 3 ingredients. Can’t get much simpler than that. It’s a cool summer dish that can be served as an appetizer, side dish, or snack for home or a picnic. If you’re a gardener you might only have to purchase the cream cheese.
1 carrot, shredded and divided
½ cup Chive & Onion Cream Cheese
2 cucumbers, cut lengthwise in half, seeded
Set aside 2 Tbsp. carrots. Mix the rest of the carrots and cream cheese. Add to center of cucumber where seeds used to be. Sprinkle with set aside carrots.
Slice each cucumber half into 5 pieces to serve.
