2 red bell peppers
4 tomatoes, quartered
2 cloves garlic, finely minced
2 tsp dried oregano
2 tbsp fresh parsley
Handful of Feta Cheese, crumbled
Preheat oven to 400 Fahrenheit.
Grill the red bell peppers whole, but turn them frequently so as not to burn them. When they are tender and starting to char, remove them and set aside to cool slightly, then remove the stalk and seeds. Slice the peppers lengthwise.
Arrange the sliced pepper and tomatoes in a baking dish. Add the garlic and oregano and combine. Bake in the oven for about 15 minutes. Sprinkle with the Feta cheese and return to the oven for another 5 minutes. Remove from the oven, sprinkle with fresh parsley and serve immediately as a side dish.
