Recipe: Easy Cumberland Sauce

Yields about 1 ½ cups

1/3 cup white wine
½ cup orange juice
2 tbsp lemon juice
1 tbsp brown sugar
1 tbsp orange rind, grated (preferably organic)
½ tbsp lemon rind, grated (preferably organic)
1 cup red currant jelly
¼ tsp dry mustard
Pinch of ground ginger
Pepper and salt to taste

Place all ingredients, except pepper and salt, into a saucepan and bring to a quick boil. Reduce heat immediately to low and allow to simmer for about 15 minutes. Stir occasionally. Remove the sauce from the heat and set aside to cool and thicken. Before serving, add salt and pepper to taste.

This sauce (hot or cold) tastes great with any meat dish.
