Cold Asparagus in Lemon Garlic Dressing
I just love asparagus, but the family gets tired of the same old, same old. I usually roast mine with a bit of olive oil in the oven, but because this asparagus is served cold, we’ve steamed it instead.
Ingredients:
2 tablespoons sour cream
1 tablespoon milk
1 clove garlic, minced
1 teaspoon grated lemon peel
About 2 dozen fresh asparagus spears, woody bases snapped off and discarded
How to Make It:
Make this one an hour or two in advance, so the asparagus is completely cooled.
In a small bowl, combine garlic, buttermilk, sour cream and lemon peel. Cover and chill until ready to serve.
I have a microwave steamer from Tupperware that I absolutely love and with it, I steam the asparagus for about 8 minutes. Use your preferred steaming method and cook until tender-crisp.
Rinse the asparagus with cold water. Cover and chill until serving time.
When you’re ready to serve it, toss asparagus with lemon garlic mixture.
