Egg Stuffed Pepper – Easy for Breakfast, Lunch or Dinner
Instead of the carb-loaded breakfasts everyone else in my family likes to eat, I decided to try something a little different today. I am sure it’s not revolutionary and there are probably recipes out there like it, but boy was it delicious.
I simply took one yellow pepper (you can use any color that you want), cracked in 2 eggs, sprinkled it with pepper and topped it with some shredded cheddar cheese. I put it in the oven for almost 30 minutes at 350F.
And voila! Delicious breakfast. My tummy is satisfied and full, but it was so good, I want another one!
