Stir Fried Chinese Vegetables

Serves 4

1-inch piece fresh ginger, finely chopped
2 cups snow peas
1 cup mushrooms (of your choice), sliced
1 red bell pepper, diced
1 yellow bell pepper, diced
4 green onions, thickly sliced
2 cups bean sprouts
1 cup cooked rice
3 tbsp soy sauce
Peanut oil
Handful of peanuts

Heat some peanut oil in a large non-stick frying pan (or wok) on high heat and add the ginger, peppers, snow peas, mushrooms. Stir-fry for a few minutes, then add the cooked rice, green onion, bean sprouts, peanuts and soy sauce.

Stir-fry for a further few minutes, until the vegetables are tender.

Serve immediately.
