Recipe: Salmon Casserole

Serves 4

1 (16oz) can salmon, drained and flaked
2 cups noodles, cooked and drained
1 small onion, finely chopped
2 tsp chopped dill
1 cup cottage cheese
1 cup sour cream (reduced-fat)
2 tbsp breadcrumbs

Preheat oven to 350ºF.

Combine all ingredients (except breadcrumbs) in a large mixing bowl and transfer into a greased casserole dish. Sprinkle with breadcrumbs. Bake in the oven for about 40 minutes or until the top of the casserole is starting to brown.

Serve immediately with a tossed salad.
