Serves about 4
2 salmon fillets, skinned and cut into strips
½ cup all-purpose flour
2 tbsp Parmesan, grated
½ tsp dried thyme
2 cups fresh breadcrumbs
Preheat the oven to 425°F. Line two baking trays with baking paper.
Combine the breadcrumbs, thyme and Parmesan cheese and place onto a shallow plate. Place the flour on another shallow dish. Whisk the egg and place it onto a third dish. Dip each salmon finger first into the flour, then the egg and then the breadcrumbs mixture. Place onto the baking tray and bake in the oven for about 20-25 minutes, until the fish is cooked through and crisp on the outside.
Serve immediately with a tossed salad and potato wedges.
