Oven Roasted Squash – Easy Recipe
I found another great recipe idea on Pinterest. I’m totally loving it. You can follow me here if you want. But that aside, let’s talk about this great butternut squash I made last night.
Butternut squash is very colorful and flavorful. For some (like my kids), the texture takes some getting used to, but it’s pretty darned good. It can be tricky to peel it, but holding your peeler steady with a little bit of patience will get you there.
Oven Roasted Butternut Squash Recipe
The key to this recipe is using a shallow baking dish and cutting the squash into small pieces (about 1″ cube), but not too small or you’ll an overcooked result.
Ingredients:
* 1 large squash
* 2 tablespoons olive oil
* 1/2 tablespoon dried parsley
* Pepper, to taste
Preheat oven to 400F.
Peel the squash and cut it into 1 inch cubes. Place the oil, parsley and pepper in a large bowl and mix well. You can add other seasonings too, but we were going for a pretty subtle taste. Add the squash to the bowl and stir until all the pieces are fully coated. Transfer the squash to a shallow oven-safe pan. Place in oven for about 45 minutes.
Makes about 5 servings, depending on the size of your squash.
