2 ½ cups unsweetened flaked coconut
1/3 cup butter (unsalted), melted
2 cups mashed cooked sweet potatoes
½ cup sour cream
2 tbsp lemon juice
½ tsp ground ginger
½ tsp ground cardamom
3 eggs, lightly beaten
Preheat oven to 300ºF.
Combine the coconut and butter in a bowl and mix well. Transfer the mixture into the bottom of a 9-in pie plate and up the sides, pressing mixture down slightly. Bake for about 15 minutes or until the crust is starting to turn brown. Remove the crust from the oven and increase the temperature to 350ºF.
In the meantime, place all remaining ingredients into a food processor or blender and blend well. Spread the mixture onto the crust and bake for about 30 minutes or until a knife inserted into the center of the pie comes out clean.
