Strawberry Forest Cake Recipe
This one is kind of like a traditional Black Forest Cake, but because my son doesn’t care for cherries, we’ve made a very similar cake using strawberries.
To make this recipe, you need a chocolate cake, strawberry filling, whipped cream and chocolate shavings. You might also want to have some unsweetened cocoa powder and extra fresh strawberries handy.
Chocolate Cake
You can use my moist chocolate cake recipe. Bake the cake, according to recipe directions and allow it to cool completely. Then, slice into 2 or 3 layers. I always use a thread to make nice neat layers. All you do is cut a long thread, wrap it around the cake and pull the ends around the opposite way, slicing through the cake.
Whipped Cream
It’s easy to make fresh whipped cream and you can use my whipped cream from scratch instructions. For this recipe, you need about 3 cups of cream and I used 1/2 cup icing sugar.
Strawberry Filling
You can use canned strawberry pie filling, but the fresh stuff is better. Here is a strawberry pie filling recipe.
Cake Assembly
Cover the first layer with whipped cream and strawberry filling.
Add the next layer on your cake and continue. Repeat with the remaining layers.
Once your layers are done, ice it completely with whipped cream. Then you can decorate the cake how you’d like.
I’ve flavored some of my remaining whipped cream with cocoa and made a border along the bottom of the cake and added some dollops on top. Then I topped the dollops with a cut strawberry.
For the finishing touch, I sprinkled some shaved chocolate all over. My preschool aged daughter told me that this made it very messy and I should never do that again, but when she tasted it, she agreed it was delicious!
