Chicken Dinner Ideas
Got some chicken you want to cook tonight? Whether you have chicken breast, a whole chicken or leftover chicken, we’ve got you covered with these 3 ideas:
1. Bacon Wrapped Baked Chicken (chicken breast): Simply pound some boneless and skinless chicken breast flat. Fill with cream cheese and finely chopped chives. Fold the breast over and then wrap with bacon. Secure with a toothpick. Bake in a 400 F oven for about 40 minutes or juices run clear.
2. Beer Can Chicken (whole chicken): Take a whole roasting chicken and cover it with your favorite rub. Open a can of beer and pour out (or drink!) ¼ off the top. Sprinkle in a bit of rub and carefully place the chicken in the cavity of the chicken. Carefully place on a baking sheet and bake in a 375 F oven for about 75 minutes or until juices run clear.
3. Chicken a la King (leftover chicken): Chicken a la King is easy to make and is an easy way to use leftover cooked chicken and a variety of vegetables. Saute cut up vegetables like sliced mushrooms, pepper, peas and carrots. Thicken to a sauce by adding a ¼ cup of flour and mixing thoroughly. When mixed, add 1 ½ cups of chicken stock and 1 ½ cups milk. Stir constantly until thickened. Add cooked chicken and continue to stir until warm. Season to taste and serve over rice, noodles or toasted bread.
